This wine has proved to be a bit too natural for our customers and is worth a punt if you like the low intervention style. I wanted to include it as it’s a wine that’s unlike anything I have tried before. Based in Valnerina, Francesco (the winemaker) is an enigma - he marries biodynamics, indigenous grapes and a proper hands-on approach to create wines that really jump out the glass. He only produces a few wines and everything done is super hands on. Aged on its lees with a weekly bâtonnage (stirring of the wine) it creates a complex floral wine with a distinctive and long finish. I would recommend trying the squid.
