Brut nature, the official term (technically 0-3g/L of sugar), means no sugar added but there may be some residual, which is ‘natural’. Essentially this means you can drink in peace knowing you aren't soaking up the same levels of sugar in Prosecco for instance!
Pago de Tharsys is a 12-hectare estate based at Requena, some 70 miles inland from Valencia on Spain's eastern coast. The continental climate means that summers are hot and dry and winters are cold with occasional rains. Perfect for the cultivation of the various grape varietals grown at the estate which include Macabeo, Chardonnay, Parralleda, Albariño and Xarel.O.
This particular Cava is a blend of Macabeo, Parralleda and Xarel.O and fermentation takes place via Methode Champenoise before being aged in bottle for 16 months prior to release.
