We first tried this wine at the Roundhouse in Camden during a tasting and were blown away.
We associate Pedro Ximenez with sherry and produce syrup-like, dark sweet wines.
This is a very interesting version as it’s dry made from 60-year-old vines. It has been macerated for 36 days, then aged for six months. It has a golden colour, the aroma has peach and apricot notes, long, rich, dry.
