Haut Terres, Cuvee Josephine, Cremant, Limoux, France
Cremant from Limoux is developing a really strong reputation globally and this beautiful and premium wine shows exactly why.
The domain is scattered throughout the town and consists mainly of micro-plots at an average altitude of 450 meters. The wine is made from three grapes; Chardonnay, Mauzac and Chenin Blanc using the same method that Champagne is made by. The Chardonnay is planted to the northeast to gain acidity. The Mauzac is planted on the limestone outcrops facing south-southwest and the Chenin also faces south to bring concentration to the fruit.
Beautiful golden colour with fine bubbles. The nose is seductive; fresh and mineral with pear, apple, dried fruits, white flowers, lime, and pink grapefruit. On the palate, the wine has intensity but retains its elegance throughout.
