This was from Luke's Spanish Case and had to be included in our Black Friday sale. At first you’re going to think what has Luke given me here!! But I urge you to stick with it. This wine comes from the far south of the country and is made using the same grape that is used to make a dry Sherry (a wine that I love). The vineyards are part of a 500-ha estate in the San Jose del Valle, inland, 35km south east of Jerez, in beautiful countryside close to the Sierra de Cádiz. Made up of old olive trees, vineyards (17ha), pasture (where Iberico pigs roam free) and other crops. Palomino is a relatively neutral grape so you experience a lack of fruit intensity through the wine. It’s also hot in this part of the country so acidity is low and this works to the wines advantage.!
