Laureatus hand harvests and hand-select the best grapes from their 30-year-old vines for use in their flagship Dolium wine. The grapes are gently pressed and fermented in cool temperature-controlled stainless steel tanks to retain freshness in the wine. Once fully fermented the wine spends a few months in barrel and extended time on lees. On the nose, the wine expresses medium-high intensity, outstanding fine toasted notes of vanilla, spices and caramel with an undertone of ripe pear and apple. On the palate, the wine is soft and powerful with a distinct freshness. Candied fruit, juicy citrus, subtle brioche and a lick of vanilla makes this a complex and highly intriguing wine.
